2021 Sauvignon Blanc
The smell of a walk through the apple orchard during peak blossom season on a sunny and lightly breezy day filled with perfume for honeybees. If silk became a liquid, this is how it would flow in the mouth. Appears softly sweet to taste but turns into a happy coating for the throat.
Production notes
Unique harvest technique brings the fruit to the crush pad in three separate harvests. The early pick is to capture the natural acidity, second pick to focus on the fruit driven flavors, the late pick is all about spice and body component. First batch is kicked-off with a commercial yeast while the second and third picks are added to the feremnting tank.
